Crispy Paneer Bites with GUSSA

Cornstarch-dusted paneer, shallow-fried until it crackles, then tossed in warm GUSSA and lime. A snack that behaves like wings.

Ingredients
- 14 oz (400 g) paneer, cut into 1-inch cubes
- 1/2 cup (60 g) cornstarch
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/4 tsp turmeric
- Neutral oil, for shallow frying
- 1/3 cup (80 ml) GUSSA, plus more for dipping
- 1 tbsp lime juice
- 2 scallions, thinly sliced
- Toasted sesame seeds (optional)
Method
- Toss the paneer with cornstarch, salt, cumin and turmeric until every side is coated.
- Heat 1/2 inch of oil in a wide pan over medium-high heat.
- Fry the paneer in batches, 2 to 3 minutes per side, until golden and crisp. Drain on a rack.
- Warm GUSSA and lime juice in a large pan for 30 seconds.
- Add the paneer and toss to coat.
- Scatter with scallions and sesame seeds. Serve with toothpicks and more GUSSA for dipping.
Tips
- Pat the paneer dry before dusting; wet paneer will not crisp.
