GUSSA Breakfast Hash

Crisp potatoes, onion and pepper in one skillet, GUSSA stirred through, eggs cracked into wells and covered until set.

Ingredients
- 1 1/2 lb (680 g) potatoes, cut into 1/2-inch dice
- 3 tbsp oil
- 1 onion, diced
- 1 red bell pepper, diced
- 1 tsp salt
- 1/2 tsp ground cumin
- 1/4 cup (60 ml) GUSSA, plus more to serve
- 4 eggs
- 2 scallions, sliced
- Chopped cilantro
Method
- Parboil the potatoes 5 minutes. Drain and let them steam dry.
- Heat 2 tbsp oil in a large skillet over medium-high heat. Add the potatoes in a single layer and cook undisturbed 6 to 8 minutes until crisp underneath, then turn and cook 6 minutes more.
- Add the onion, pepper, salt and cumin with the remaining oil. Cook 4 minutes.
- Stir in GUSSA.
- Make 4 wells, crack an egg into each, cover and cook 3 to 4 minutes for runny yolks.
- Scallions, cilantro and more GUSSA at the table.
