Ingredients
- 2 lb (900 g) chicken wings, split into flats and drumettes
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/3 cup (80 ml) GUSSA
- 2 tbsp butter, melted
- 1 tbsp lime juice
- 1 clove garlic, grated
- 2 tbsp chopped cilantro
Method
- Heat the oven to 425°F (220°C). Pat the wings completely dry.
- Toss the wings with baking powder, salt and pepper. Arrange on a wire rack set over a lined sheet pan, not touching.
- Bake 40 to 45 minutes, flipping once halfway, until deep golden and crisp.
- Meanwhile whisk together GUSSA, melted butter, lime juice and garlic.
- Toss the hot wings in the glaze, return them to the rack and bake 3 minutes more so the glaze sets.
- Finish with cilantro. Serve with the rest of the glaze for dipping.
Tips
- Air fryer: 400°F (200°C) for 22 to 25 minutes, shaking twice, then glaze.
- Extra Hot, once you have it, makes this a very different evening.
