GUSSA Smash Burgers

Thin, crusty patties, melted cheese and a GUSSA mayo that does the job of ketchup and hot sauce at once.

Ingredients
- 1 lb (450 g) ground beef, 80/20
- Salt and black pepper
- 4 slices American or cheddar cheese
- 4 potato buns
- 1/4 cup (60 ml) GUSSA, plus more for the patties
- 3 tbsp mayonnaise
- 1 small red onion, thinly sliced
- Pickles
- Butter, for the buns
Method
- Stir GUSSA into the mayonnaise. Set aside.
- Divide the beef into 8 loose balls. Do not pack them.
- Heat a cast-iron skillet over high heat until it smokes. Butter the buns and toast them cut-side down first; set aside.
- Add two balls to the skillet and smash each flat with a spatula for 10 seconds. Season with salt and pepper. Cook 2 minutes until the edges are crisp and brown.
- Flip, squeeze a little GUSSA over each patty, top with cheese and cook 45 seconds more.
- Stack two patties per bun with GUSSA mayo, onion and pickles. Repeat with the remaining beef.
Tips
- A second spatula pressed on top of the first gives you the leverage to smash properly.
